Wrap It Up!

Wraps are the perfect springtime lunch; they are refreshing, nutritious and easy to make. I always make chicken Caesar salad wraps because they remind me of family lunches at White Spot back home in B.C; but I wanted to branch out so I put the following ones into my wrap rotation. Enjoy!

April Journal #1

There is a strong current trend among kids to read comic books or graphic novels instead of regular books. What do you think about that?

I think that it would be great if they were reading “regular novels” but as long as they are off of screens I am happy about it. Far too many of them are what I call, phone zombies who struggle to connect socially and emotionally with others. Sometimes comic books and graphic novels make other pieces of literature more accessible to kids, for example you can get graphic novel versions of Shakespeare’s plays. I’d like to consider comic books and graphic novels as a “gateway” to other books. Some of them are actually very long and detailed so kids are actually reading quite a bit when they choose comic books and graphic novels. Ultimately, they are just a different form of literature or genre –they are still books. and the kids are still reading, which is the most important part.

National Coffee Cake Day

I had no idea that this was a thing, however, I am 100% here for it. National Coffee Cake Day is coming up on Sunday, April 7th. I had no idea that this delicious cake has a intriguing history; according to Wikipedia…

“American Coffee cake—also referred to as gugelhupf or Austrian German: kaffekuchen—evolved from other sweet dishes from Vienna. In the 17th century, Northern/Central Europeans are thought to have come up with the idea of eating sweet cakes while drinking coffee. As the region’s countries were already known for their sweet yeast breads, the introduction of coffee in Europe led to the understanding that cakes were a great complement to the beverage. Immigrants from countries such as Germany and Scandinavia adjusted their recipes to their own liking and brought them to America. Though the cakes varied, they all contained ingredients such as yeast, flour, dried fruit, and sweet spices. However, over time, the coffee cake recipes have changed as cheese, sugared fruit, yogurt, soured cream, have been used, leading to a denser, more cake-like structure. In the 19th century, American cooks also used coffee as an ingredient to thriftily use up leftovers, reducing waste, and flavor the cake. The invention of pasteurization in America following World War I also led to the creation of a new kind of coffee cake, called sour cream coffee cake. Coffee cake or gugelhupf is referenced in literary material as early as 1850 and 1763 respectively.”

Hungarian Coffee Cake

Ingredients

3 cups AP flour
1 cup brown sugar
1 cup white sugar
1 cup margarine
¼ teaspoon salt
1 cup buttermilk
2 eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon

Directions

  1. Mix the first five ingredients together in a bowl until crumbly. Measure 1 cup mixture and set aside for later use.
  2. Stir buttermilk, eggs, and baking soda into crumbly mixture until batter is smooth.
  3. Pour batter into a greased 9X13 baking dish.
  4. Sprinkle reserved crumbly mixture over top of batter; top with cinnamon.
  5. Bake at 350F for 45 minutes

March Break in Canmore, AB: Relaxation & Re-connection

-We took advantage of a booking offer that the Malcolm Hotel offered in February. We had to book between  set time on Thursday to qualify for HALF off our room. Restrictions applied in terms of it being non-refundable or transferable and we had to stay within a certain window of dates. The hotel was lovely; we had two queen beds, a balcony and an incredible view. It is walking distance to downtown. Which was perfect for lazy days of strolling down mainstream and doing a little shopping! 

-Quick brunch at Beamer’s Coffee Bar to refuel after traveling

-Dinner at The Sensory; I had the salmon and the vegan, gluten free chocolate cake!

-Cruffin from The Uprising Bakery + Espresso Bar; we wanted a sweet treat while we (finally) watched The Eras Tour. I gotta say the Cruffin (croissant & muffin hybrid) was the bomb; stuffed with an incredible lemon curd —it is a MUST try! Way better mash up than the cronut.

-Coffee and snacks from The Pulse (the general store at the hotel) while we watched Top Chef.

-Shops open around 10; we were early for so we headed back to relax and watch Irish Wish until they opened. Also, several businesses are closed Monday-Tuesday. 

-After walking around the area surrounding the hotel we hit up Rocky Mountain Bagel Company; I had the Bagel Garden: plain bagel with cream cheese and stuffed to the hit with fresh veggies. 

-Happy Hour at Brigette Bar; they have a really great selection of cocktails (Next Exit) and half off pizzas (Chicken Sausage) 

-To wrap up the night we watched The Little Mermaid and tried a couple different confections from The Uprising again (Honey cake, carrot cake and apple streudel).

March Journal #4

Have you ever snooped in a friend’s or partner’s house?

I have never snooped in their house but  I have snooped in their phone and I’m ashamed to say it. I was just coming out of a long-term relationship and I was very blindsided by the breakup so I was just being over cautious and suspicious. Ultimately it was wrong and I really shouldn’t try and justify it. I’ve also been cheated on in the past and sadly I found out that I was the other person in another relationship. Anyways, I looked at the text between one of my boyfriends and his ex-girlfriend. I was shocked to see that they had had recent communication but nothing concerning at least from what was indicated by the messages that were present or hadn’t been deleted. I don’t like when people touch my stuff, my mom was a big snoop so that really bugs me so I don’t know why I would do it to somebody else.

    Veronica and Stoker go on THE wildest adventure so far in the series to discover what happened to a young women; whose body was thought to be a mannequin. Riffing on Frankenstein it was a thrilling read.

March Journal #3

What is your favorite physical aspect of your partner? If you are single, describe something you like about a crush or your fantasy celebrity date.

Forearms or arms in general! To me they signify protection and strength. They are what can hold me tight and shield me from danger. They are muscular from his physically demanding job. The definition of tissue and veins reminds me of a sculpture by the great Renaissance artists. Also, in the summer he tans really dark and ends up with a farmer’s tan on his upper arms. He has a tattoo on his upper arm and when we’re laying in bed and I can’t sleep I stare at it and trace it lightly with my finger.
