Carrot Casserole

In an effort to eat better I decided to substitute some of my meat heavy recipes for meatless ones. I discovered an incredible recipe for carrot casserole; this recipe makes for a great side dish or an entree.

Ingredients

3 large eggs
2 cups of cooked mashed carrots
1 cup milk
1/4 cup of margarine melted
1/3 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon pepperĀ 
1 cup fine dry bread crumbs

Directions

-Beat eggs in a bowl until they are frothy then add the next six ingredients to the egg mixture and mix well
-Add breadcrumbs, stir until blended
-Pack into an ungreased casserole dish (2L)
-Bake uncovered at 350F for 1 hour.
