March Journal #2

Do you prefer to dance with no one watching, with a group of friends, or with one special partner?

I am not a particularly good dancer. I  never have been. I don’t have a really good sense of rhythm. My parents never made me take dance lessons; in fact I went to one “to see if I liked it” and I didn’t –I think I spent a total of 15 minutes; the entire time sulking. I’m actually quite self-conscious about my dancing. I do love to “boogie” around the house when no one is home while I listen to Spotify and do chores. I am sure it’s quite the sight to behold. I do love it when I can slow dance with my husband. That’s a super rare occurrence. I think in the last 6 years of our married life we have maybe slow danced maybe four times. When I was younger and actually went “clubbing” or as my husband likes to say in my “bar star days” (which he seems to believe were much wilder than they actually were) I did dance a bit with my friends. Whenever my friends and I were out I tended to simply stand in the corner with a drink in hand because it really wasn’t my thing. I mean if I was drunk enough or rather once everyone else was drunk enough and paid me little attention I would cut loose a bit more on the dance floor.

Easy Shrimp Fajitas

Ingredients
1 Tbsp Lime Juice
2 Tbsp Minced Garlic
¼ tsp Frank’s Red Hot
1 pound Shrimp (ready to eat)
1 tsp Olive Oil
1 Onion (sliced)
1 Bell Pepper (sliced)
2 tsp Tex-Mex Seasoning
4 Keto Tortillas
1 Tomato (diced)
1 Avocado

Directions
1. Marinate the shrimp in the fridge for 30 minutes in a mixture of lime juice, garlic and Frank’s
2. Saute the onion, bell pepper in the olive oil until tender in a frying pan
3. Add Tex-Mex seasoning to the pan and continue cooking for 30 seconds
4. Set the onion, pepper & seasoning aside in a bowl (keep covered)
5. Cook the shrimp in the frying pan (be careful not to overcook)
6. Assemble your tortillas with onion, peppers, shrimp and top with tomato and avocado

March Journal #1

Write about the weirdest job you have ever had.

I haven’t had many jobs. I was a Sickbay worker on a cadet camp base. I was a parts picker and packer at Ford. I worked one night as a hostess at an ABC Country Restaurant. I worked one day picking ice cream at a Nestle warehouse. Then of course I’ve been a teacher for the last 14 years and I run a business with my husband. Although in terms of the business he really does all the work, or at least 90%. I don’t classify any of my jobs as the “weirdest.” Obviously, since I didn’t last more than a day at two of them –I really didn’t like them. I mean there have been weird days or weird moments but no job has been the “weirdest.” For example, there have been “interesting” ailments to deal with. There have been “quirky” bosses. There have been “wacky” co-workers. And having to wear a full on snowsuit in indoors was pretty odd (necessary but odd). The kids that we teach are wonderful, special not too mention hilarious; they make everyday amazing and weird.

Outfit of the Week

As you know, one of my goals for March is to “make the most of my Spring Break;” so I am heading off to Victoria, BC, with my bestie and I am treating us finally to High Tea at the Empress Hotel. The dress code is business casual; but we decided to have a little fun and get gussied up so I have been browsing for options and I have finally settled on an outfit… here it is!!

Shoes: Mimi Woven Metallic Block Heel Sandals in gold

Easy Tortellini Soup

Ingredients
Cooking Spray
1 Clove of Garlic (minced)
4 cups Chicken Broth
8 oz Cheese Tortellini
4 oz Frozen Spinach (thawed)
14 oz Stewed Tomatoes
Cooking Spray

Directions
1. Spray PAM in a large pot and saute the garlic until softened.
2. Add the chicken broth and tortellini to the pot; bring to a boil then reduce heat for 5 minutes.
3. Add the spinach and tomatoes; continue to simmer for an additional 5 minutes.

March Goals: “Making the most of…”

Having bid 2022 a long overdue “adieu,” I spent some time thinking about what I wanted 2023 to be. Every year I tell myself that “this is my year, this is the year I’m going to get started.” Started on what?, I am not sure. 2022 was another tough year, the heartbreak often overshadowed the incredible moments. I lost momentum a lot in 2022; it seemed like the second I dusted myself off, something else hit me hard. Two steps forward, one step back. Most resolutions have been abandoned by now, so I didn’t make any. Instead, I decided that each month I am going to set a series of THREE different challenges or goals.

The focus of February was Mental Health: journalling, reading instead of scrolling and meditating. I am going to try and continue on with those goals but I am going to add the following…

March 2023: “Making the Most of…”

-I have been absolutely loving the ones I have done so far (25)… 81 left to go!

-This has been on my bucket list for a while; so I am going to finally treat myself

February 2023 Goals: Accountability Post

I can’t believe how fast February flew by; I mean I shouldn’t be surprised it is the shortest month in the year. I set three small goals for myself in January (which centered on physical health) and then again in February, however this month I focused on mental health. To keep myself accountable I’m checking in monthly with you all. As a refresher, my goals were…

1. Journaling
2. Reading instead of scrolling
3. Meditation

How did I do?

In terms of journalling; I start every morning journalling. I use my 200 Writing Prompt book from Piccadilly. These are the prompts that I share with you each Wednesday. Journalling in the morning keeps me off my phone. I am not scrolling on social media and I am not checking my work emails until I get to work. I enjoy the quiet moments to myself in the morning.

In terms of reading instead of scrolling; I read a book a week. The unfortunate part has been that I ran out of physical books so I had to buy books on my ipad –so I haven’t ended up limiting my screen time before bed in that sense. However, even though I’m on a ‘device’ before going to bed; I am actually sleeping better (my sleep score on my Fit Bit can attest to that) because I am not viewing overstimulating posts.

In terms of meditation; I have been doing a breathing exercise each morning and before bed, consistently. After getting ready for work I sit on the couch do a meditation, respond to a journal prompt and then the Wordle. It’s a really good routine. Right before bed I read up to 7 chapters in a book then my breathing exercise and then turn out the lights.

Describe, in a creative way, how you feel when you have a head cold.

I feel like a DRAGON!

Drained and discombobulated.
Red nosed.
Anxious because I may have to book a sub and that is so much more work and so much worse than being sick.
Gross!
Overtired and therefore extremely ornery.
Needing lots of naps.
