Cran-Orange Loaf

Ingredients
½ cup margarine
1 ¼ cups white sugar
⅓ cup orange juice
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
½ cup sour cream
1 ¼ cups dried cranberries

Directions

1. In a large bowl, cream the margarine, sugar and eggs together
2. Add orange juice and vanilla; mix well
4. In a medium bowl, combine all the dry ingredients together and stir
5. Add dry ingredients and sour cream to the margarine mixture; mix well
6. Fold in the dried cranberries
7. Pour batter into a loaf pan lined with greased parchment paper
8. Bake at 350F for 1 hour; or until a toothpick comes out clean
9. Let loaf cool in pan before removing

January Journal #1

Do you have anyone in your life that has acted as a mentor to you? Have you ever helped someone else out in this way?

I have had many mentors over the course of my 36 years of life. They have all imparted something different but equally important on me. The most obvious mentors would be family members, however, apart from them, the most impactful mentors have been my teachers. My kindergarten teacher taught me to love learning and is the reason I wanted to become a teacher. My Spanish teacher in high school perhaps was a once in a lifetime mentor; she guided me and gave me advice during some of the darkest periods of my life. There isn’t a day that goes by that I don’t think of her. We have lost touch sadly, but I like to think that she would be proud of me. When I first started teaching my first principal and vice-principal took me under their wing and I am forever grateful for that. First year teaching can be extremely difficult. I try to be a mentor to my students of course. I had the opportunity to be a “mentor-teacher” for a university student and although I didn’t feel worthy of this prestigious position it allowed me to grow and it allowed me to realize how much I had learned over my many years of teaching and how much I had to offer to someone. Being a more senior staff member I try to help beginning teachers as much as possible.

Goodbye 2022, Hello 2023

Having bid 2022 a long overdue “adieu,” I spent some time thinking about what I want 2023 to be. Every year I tell myself that “this is my year, this is the year I’m going to get started.” Started on what?, I am not sure. 2022 was another tough year, the heartbreak often overshadowed the incredible moments. I lost momentum a lot in 2022; it seemed like the second I dusted myself off, something else hit me hard. Two steps forward, one step back. Most resolutions are abandoned by February, so I am not going to make any. Instead, each month I am going to set a series of THREE different challenges or goals. 

January 2023: Health

1. Move My Body
–Daily Sit-Ups

2. Cleanse
–Increase water intake

3. Smart Eating
–Decrease snack food
